Lemon Meringue Pie Recipe

Add a little water, mix until smooth and add remaining water. Cook over moderate heat, stirring constantly with a wire whisk or wooden spoon, until mixture boils. Lower heat and continue cooking about 1 minute, stirring constantly. Beat egg yolks. Add a small amount of the hot mixture to the yolks . Blend well and return to saucepan with the hot mixture. Cook over low heat until thick, about 2 minutes, stirring constantly. Add butter. Mix well, then cool. Add lemon rind and juice and mix well. Cover and cool to room temperature. Preheat oven to 325°.

Make meringue: Beat 3 egg whites with a pinch of salt until foamy. Continue beating and add 6 tablespoons of sugar, one tablespoon at a time. Meringue is ready when mixture stands in stiff peaks. Spread lemon cream in pie shell.
